Brain-Healthy Salmon with Sweet Potato and Spinach

This delicious and simple salmon dish, served with roasted sweet potatoes and sautéed spinach, is loaded with brain-boosting nutrients. Salmon provides omega-3 fatty acids, sweet potatoes are rich in antioxidants, and spinach offers essential vitamins and minerals.

Ingredients:

  • Salmon:
    • 2 salmon fillets
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 1 lemon (half for zest and juice, half for garnish)
    • Chopped parsley 
  • Sweet Potatoes:
    • 2 medium sweet potatoes, washed and cut into 1-inch cubes
    • 1 tablespoon olive oil
    • 1 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • Salt and pepper to taste
  • Sautéed Spinach:
    • 6 cups fresh spinach
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Sweet Potatoes:
    • Preheat the oven to 400°F (200°C).
    • In a bowl, toss the sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper.
    • Spread the sweet potatoes on a baking sheet in a single layer.
    • Roast for 25-30 minutes, or until tender and slightly crispy, stirring halfway through.
  2. Prepare the Salmon:
    • While the sweet potatoes are roasting, preheat the oven to 375°F (190°C).
    • Place the salmon fillets on a baking sheet lined with parchment paper.
    • Drizzle with olive oil and season with salt, pepper, and lemon zest.
    • Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
    • Squeeze fresh lemon juice over the cooked salmon and add fresh chopped parsley.
  3. Sauté the Spinach:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the minced garlic and sauté for about 1 minute, or until fragrant.
    • Add the spinach to the skillet and cook, stirring frequently, until wilted, about 3-4 minutes.
    • Season with salt, pepper, and lemon juice.
  4. Serve:
    • Divide the roasted sweet potatoes and sautéed spinach among plates.
    • Top each plate with a salmon fillet.
    • Garnish with additional lemon wedges if desired.
